Sofrito: a well-cooked and fragrant sauce
In our house we use tomatoes, garlic, onion, herbs...Finely dice the tomatoes, smash the garlic and chop the onions -and add to a hot pan with olive oil. Salt well. Let this cook/sweat for about 10 minutes. Add the herbs and now put everything into a blender -whizz until it's pureed.
It's a tasty and delicious foundation for many dishes. Use it for caldo (a broth or bouillon) to which one can add seafood, meat, vegetables etc. Take the sofrito, sieve it and put into a pan. Add some stock and then the main ingredient. So simple and so tasty.
The best caldo I've ever had was in Veracruz at our hotel; it was a caldo de camarones - whole prawns, shell-on. Oh my god it was so good.
