SALAME DOLCE
We went to Al Tiramisu for dinner last night and I saw G's face fall when they told him they didn't have any salame dolce for dessert.
Sweet Salame? For a pudding? Gag.
Let me explain...it's an Italian dessert that is full of chocolatey goodness made to resemble a salame. That's all. There's no meat in there, thank god.
Here's a recipe for it:
6 ounces of cookie crumbs (Petit Beurre)
Half a cup of sugar
5 ounces of melted unsalted butter
2 egg yolks
6 tablespoons unsweetened cocoa powder
1 ounce of grappa (use Grand Marnier, whiskey or rum as a substitute)
Beat the egg yolks and sugar until well blended.
Stir in the melted butter and cocoa powder.
Crush your cookie crumbs using a plastic bag and rolling pin. Make sure the pieces are uneven as you want them to resemble the fat pieces in a (real) salame.
Form the ingredients into a salame-shaped roll and cover with aluminium foil.
Pop into the freezer for 30 minutes or until it's firm.
Now you can sprinkle the salame with icing sugar to make it look even more like the real thing, or leave it unadorned, slice and serve with fruits or cream.
