amaretti biscuits (my version of ricciarelli)




this must be one of the easiest recipes known to mankind. the best part is, you probably have all the ingredients tucked away in your kitchen already - well maybe not the almond paste unless you are like me and tend to buy things at random "just in case".

here are the ingredients:

2 large egg whites
1 cup of sugar
1 7oz tube of almond paste (make sure it's not marzipan)

here's what to do:

crumble the almond paste with sugar in a food processor until it's broken down into fine crumbs.
add the egg whites and continue whizzing until it's pureed. it will come together when you add the whites.

now pipe the gooey mixture into little circles on a sheet of parchment paper.

bake at 300 degs F for around 18 mins - check regularly though as cooking times can vary according to the size of your blobs and also your oven. one time mine were done in 13 mins, another batch took closer to 20 mins.

leave them to cool completely. if you remove them from the paper too soon they might leave their innards behind!!
