cauliflower and celery soup
very fast and simple... take one cauliflower and cut in half. put half back in the fridge, as only half is needed for this soup (enough for 4 people).
chop up into florets
chop 2 stalks of celery
put 2 smashed garlic cloves, celery and the florets into a deep pan, and sautee in 4 tablespoons of butter for 10 minutes (medium low heat).
add 2 cups of chicken stock and 2 cups of milk, and bring to the boil.
simmer for 15 minutes. add salt and pepper to taste. because of the milk, it can get pretty frothy so keep an eye on it to ensure it doesn't bubble over.
put everything into a blender and whizz until you get the consistency you want. less whiz for more texture.
et voila - cauliflower and celery soup. i know it doesn't look very appetizing in the photograph but it's a nice creamy colour and has a good full taste. garnish with a few celery leaves and a dash of black pepper.
