another way to make rice other than boiling in water and them simmering it...is the mexican way. still with no rice cooker anywhere in sight, and embarrassed to be confined to cooking solely jasmine rice with instructions, i learnt the mexican way of doing it to "expand my rice-making horizons"... note: this isn't a recipe for mexican rice, rather it's the mexican way of preparing regular white rice. 1. take 1 cup of rice. rinse well under cold water. 2. put in saucepan with oil. (make sure saucepan is deep enough to hold the water.) 3. over medium heat, stirring regularly so it doesn't stick or burn, fry until the rice grains are almost translucent. 4. add 1.5 cups of water and bring to boil. 5. simmer until water has gone and rice is ready. takes around 15 mins. the frying adds a nice flavour - hardly noticeable really but it adds just a little something. years ago i used to crave rice by itself. white rice is painfully boring. to fix this, i would add a large teaspoon of bouillon powder to the water - voila, chicken flavoured rice. another thing i do (when home alone) is to drizzle lots of fish sauce atop a bowl of plain white rice...this is one of my favourite treats.
