How to make a cucumber more interesting, Mexican-style
Living with a Mexican Spaniard has many many many advantages -discovering how to make a cucumber more interesting to eat is just one of them. Commonly served as an appetizer whilst you're preparing lunch or supper. Also goes down nicely while sipping a small glass of tequila (so I am told).
1. Slice cucumber lengthwise into long wedges. If you use an English cucumber you don't need to remove any of the skin. If you use an American one (ok I know they're not American per se but you know what I mean), remove as much of the skin as you can, as it's tough and a little bitter.
2. Sprinkle powdered chili pepper on top of the cucumber (not too much, just a light sprinkling).
3. Squirt lime juice over. (Lime not lemon!)
4. Open mouth, put inside.
You can also do the same with jicama (also known as the Mexican potato). If you don't like the chili seasoning, sprinkle on salt and pepper instead and finish with a squirting of lime juice.
